Established in SY 71 by Emma Reyes, Sofrito Nebula began as a single Puerto Rican style restaurant. In the very beginning Emma simply wanted to own her own restaurant, and cook in it. She was the first chef there before she finally hired someone.
The second restaurant opened in SY 73 and by SY 88 there were three restaurants. Each one of them is in a different district. She also changed the name of her restaurant to Sofrito Nebula Restaurant Company. This was largely due to changing it over to a chain style restaurant. It currently stands as one of the most popular restaurant chains on the entire station.
